Well... when an engine is cast or made, there are passageways, holes ,and water jackets built into the block of the engine. Inside these passageways runs water/coolant. This circulating coolant is what pics up heat and carries this energy to be transferred to the moving air in the radiator. This process is continuous as long as the engine is running, or the fan is blowing air. Even the engine oil has a small part of cooling the engine as well.
